In 2018, on a trip through the volcanic highlands of western Java, a farmer in the hills above Bandung handed him a cup of something different. No bitterness. No acidity. It was wild kopi luwak: beans selected by free-roaming civets, naturally fermented during digestion, collected from the forest floor, and roasted in small batches by a family who'd been doing this for generations.
